Whenever summer comes, I always wonder what the hottest day will be. Growing up, my parents’ home did not have any AC except for in our rooms. Wanting to save energy, my mom usually doesn’t allow us to turn it on until we go to bed. There will be fans everywhere downstairs in our living room all set on high. We have large bamboo mats we would lie on the living room floor so we could be closer to the fans.


Needless to say, we would all dread the very hot and humid days. No one would want to eat at lunch and dinner time. All I want are cold foods which my mom tried to make. Having gone to school and able to try the different American foods, I fell in love with chicken salads. (At that time, I was not vegan yet). My mom did not know how to make them and would drive to the grocery store to get some.


Thinking about this and not wanting to cook lately, I thought back to those memories and decided to make a cold White Bean and Basil Salad that takes only 5 minutes to make. You can add it to salads, in a sandwich or as a spread for a wrap.
