
One of the best parts of summer?? The watermelon for sure. It is one of the fruits where I don’t eat enough when they are in season and suddenly crave them when it is winter and freezing outside.

After discovering how good watermelon tastes when it is frozen, I have been forever obsessed with them. I love cutting them up into cubes to eat or adding them to smoothies. Another new found love I have is making these Matcha Watermelon Popsicles that are dairy-free, vegan, gluten-free, and refined sugar-free.

Popsicles are one of the easiest frozen desserts to have and make. I would prep them the night before and they will be ready by the morning or in a few hours if I make them during the day.
