This Vegan Walnut Coffee Cake is everything you are looking for for the perfect warm and cosy fall treat. It is moist, not overly sweet and with the perfect touch of coffee flavor.

I am not the biggest coffee person, but I absolutely love any dessert that is coffee flavored. I love the smell of it, filling your entire body. My mom is a huge coffee drinker and would get headaches if she does not have any for a day. So watching her have all the painful headaches made me promise myself to not become a coffee addict, though I do have a cup of coffee every once in a while especially lattes. Coffee in desserts is something that I can never say no to unless they do not have any coffee flavor.

It is just starting to get chillier in New York and I cannot be more excited. I love summer the most, but there is something so unique about autumn air and seeing the leaves change colors that fills me with so much joy. After a long walk, I usually like to sit down with a warm cup of tea and a snack. Thinking of this, I decided to make this Vegan Walnut Coffee Cake because I can make it for breakfast, snack, and dessert. If you are a coffee lover, you would not want to miss this.

How do you make this Vegan Walnut Coffee Cake?
Preheat the oven to 350°F. Line 3 6-inch round cake pans with parchment paper or spray with oil. In a small bowl, mix together the plant-based milk with the apple cider vinegar. In a large bowl, mix together the flour, espresso powder, ground cinnamon, baking powder, and salt together. Set aside.

Using a mixer, whisk together the vegan butter and sugar until fluffy. Add in the flaxeggs, maple syrup, applesauce, and vanilla extract. Whisk together again until combined. Slowly add in the flour mixture, whisking as you go. Continue to mix until the batter is smooth. Fold in the chopped walnut. Let the batter sit for 5 minutes.

Divide the batter into the 3 pans. Bake for 30-35 minutes or until toothpick comes out clean. Remove from the oven and allow to cool completely before frosting.

Vegan Walnut Coffee Cake (gluten-free)

To make the frosting, use a mixer and mix together the vegan butter, cream cheese, powdered sugar, vanilla extract and cinnamon powder. Mix until smooth and creamy. Once the cake has cooled, frost the cakes one layer at a time. Once you reach the top and sides, continue to frost and smooth using a bench scraper or spatula for a smooth finish. Top with more walnuts and some more ground cinnamon if desired. Serve and enjoy!
