The first time I had madeleines was in the summer of my junior year in college while taking a summer abroad food writing course in Paris. It was my first time traveling out of the country and I was ecstatic. I couldn’t wait to try all the food, especially the sweets. The first bakery I went to was one of the original bakeries in Paris, only a short 10-minute walk from the dorm I was staying in.



I walked there almost every morning to taste the fresh baguettes and pastries, one being madeleines. I love how soft they are, lightly sweetened and fluffy inside. They are like little soft sponge cakes in cookie size form! Since then, I have always wanted to learn how to make a vegan and gluten-free version of them. Here comes this Vanilla-Pistachio Madeleine! Easy to make and so tasty. I definitely have been snacking on them throughout the day and with a cup of tea or coffee if you prefer.


Here are the ingredients you will need to make these Vegan Vanilla-Pistachio Madeleines:
-almond flour
-brown rice flour
-arrowroot powder (or tapioca flour/starch, cornstarch)
-organic coconut sugar
-coconut oil
-plant-based milk of choice
-baking powder
-Optional Ingredients for the Glaze: organic powdered sugar, vanilla extract, vegan butter, chopped pistachios
