
These Vegan Vanilla Cupcakes are light and fluffy. It requires only 10-ingredients to make the cupcakes itself. Perfect as a snack or as a dessert.

I have not always been a fan of vanilla. I felt that it was too plain and I much prefer chocolate. My sister was the opposite and would only have sweets if chocolate is not involved and preferably if it was vanilla flavored. So when I was growing up, my mom would try to balance the sweets out with some chocolate and some vanilla.


Since my younger age, I came to appreciate vanilla flavor more and more. It is a classic but I believe that the simpler the dessert the more special it is. If you can nail down the basic flavors of vanilla and chocolate, I believe you have an amazing bakery or cafe or homemade recipe. I realized this when I traveled to Paris, learning how simple their ingredients are yet rich and indulgent.


Given that I eat so much chocolate, every once in a while, I would want something simple, vanilla flavored or another flavor I don’t have often. Looking back to what I have baked in the past, I realize I have no vanilla desserts. Problem fix. I decided to make these simple and easy Vegan Vanilla Cupcakes and paired it with some raspberry frosting for some spring vibes.
