These Vegan Strawberry Shortcake Popsicles are easy to make and require only 6-ingredients. It makes for the perfect, refreshing summer treats to have.

Vegan Strawberry Shortcake Popsicles

When I was little, the only popsicles I would have were either in chocolate or strawberry flavored. Chocolate, because it is chocolate and who doesn’t like chocolate desserts? Strawberries because they are my favorite fruit. Every summer, when strawberry season arrives, my mom and I would go to the farmers’ markets and stock up on strawberries. Of course, strawberry picking cannot be missed as well.

Whenever we have too many ripe strawberries in our fridge that I cannot finish in time (because I was the only one out of my two siblings who likes eating fruits everyday), my mom would make smoothies or popsicles out of them. We bought a popsicle mold during one of the summer sales from the previous years and always waited for the summer to come to use it. My mom would blend a mixture of ripe strawberries with coconut milk and a little condensed milk to it and keep it in the freezer whenever my siblings and I would like some, which never lasted past 3 days.

Thinking about this, I wanted to make some strawberry popsicles before all the strawberries are out of season. Luckily, I live close to a farmers’ markets and the strawberries were still available in some stalls. I made these Strawberry Cheesecake Popsicles immediately when I returned home. I added the vegan graham crackers on top of the popsicles, but you can also incorporate them into the popsicle mixture itself before placing it in the freezer to set.

I made these popsicles with Native Forest’s Simple Organic Coconut Milk and Let’s Do Organic’s Organic Heavy Coconut Cream from Edward & Sons. I used the full-fat version of the coconut milk for a richer flavor and creamier texture. As you know, I love using Edward & Sons’ products because of their high quality.

If you want some refreshing and tasty treats in your freezer, here are what you will need to make these Vegan Strawberry Shortcake Popsicles:
-fresh strawberries
-full-fat coconut milk (I used Native Forest’s Simple Organic Coconut Milk from Edward & Sons)
-heavy cream (I used Let’s Do Organic’s Organic Heavy Coconut Cream from Edward & Sons)
-maple syrup
-vegan cream cheese
-vegan and gluten-free graham crackers
