These Vegan Strawberry Lemon Blondies take minimal time to make and only 10-ingredients. It is refreshing to have for the summer as a snack or for dessert.

I cannot believe how fast July is going by already. It has been a challenging year for many of us and many feeling out of alignment. What I turned towards the most whenever I am feeling out of alignment or overwhelmed is baking.


I love the therapeutic process of measuring ingredients on the scale, the touch and feel of flour, the smell of freshly baked goods, and the process of mixing all the ingredients together. It allows me to focus deeply on what I am doing and appreciate the moment even more despite all that is going. Now, sweets are always on top of the list for me as comfort food.


However, paired with seasonal fruits, I love them even more. I cannot get over how food all the berries are right now. I look forward to the end of the week every week not because I do not like weekdays, but because I get to go to the farmers’ market and get all the freshly picked berries.

I am lucky to live close to one of the largest farmers’ markets in New York and have the opportunity to get many fresh produce. Before all the strawberries are gone for the season, I am definitely eating as much of them as possible and if I can add them to baking, I certainly would!

For a quick and easy snack, I decided to make some of these Vegan Strawberry Lemon Blondies. I added a strawberry lemon glaze to it, but you can certainly not add it if you do not want to. It is good just as is. If you want something that will melt in your mouth and also be refreshing, these blondies are for you.

-unsweetened, plant based milk of choice
-unsalted vegan butter
-nut butter of choice
-flaxseed meal
