
This Vegan Strawberry Lavender Pie is made with minimal ingredients and leads to a flaky, buttery crust. The sweetness of the strawberries pairs perfectly with the lavender. It makes for an easy summer dessert.

For a while I have been avoiding making pies thinking it is difficult to make and takes too much time. However, with summer being in full force now and with strawberries being so good, I told myself I need to branch out and make as many summer treats as possible since the season is only for two more months (where is time flying???). I have only made a handful of pies in the past, admittedly, only for Thanksgiving and Christmas, but making this pie was surprisingly easy for me.


I was excited for the whole process and maybe that is the reason why this pie was easier to make. The crust is flaky and buttery, but also not too rich being balanced by the fresh strawberries. You only need a few ingredients to make this pie and you can prepare the pie dough the night before to save you time!

-1:1 gluten-free flour or all-purpose flour
-unsalted, vegan butter
-iced water
-fresh strawberries
-organic coconut sugar (can sub for cane sugar)
-arrowroot powder
-lavender buds
-salt
