
This Vegan Purslane and Peach Salad requires minimal ingredients to make and is the perfect summer salad. It is refreshing to have and the purslane brings out a lemony flavor to the salad.


Despite all the sweets I make, I do eat regular meals. One of my favorites to have especially during the hot summer days, is big salads. I love being able to pair them with any toppings I like and make it a fulfilling bowl to have. I used to not like to make salads at home, thinking it always tastes better to buy in store. When I was living in Boston, I would have Sweet Greens (a vegan salad/grain bowl restaurant) many times throughout the year. I always think their salads taste better even though I have the same ingredients on hand.



Nevertheless, I realized that a good salad can taste tasty with the right salad dressing. I used to like to try all the store-bought salad dressings, but now realize how much better they taste when they are freshly made at home and made with minimal ingredients.


This Purslane and Peach Salad was inspired by one of my recent trips to the farmers’ market. At one stall, they had a huge pile of purslane so I decided to get some. Purslane is actually a type of weed that you might have seen in your backyard or other outdoor green spaces. They can grow everywhere. You can eat them fresh or cooked and they have a lemony flavor that makes them unique and refreshing to have. Now that it is the summer, I tossed the salad with a light 3-ingredient dressing and topped it with fresh fruits and some nuts for the extra crunch.

-fresh purslane
-mustard greens (or any other greens of choice)
-green plums
-fresh peaches
-nuts of choice
-fresh corn
-organic extra virgin olive oil
-lemon juice
-maple syrup
