Well, autumn officially started today and the weather outside definitely matched it. The leaves are starting to turn yellow/orange/red, all the hues of fall. The morning air is crisp and chilly, not cold to the point you need a large jacket yet. Though I am dreading the big puffy coat.
This has been quite a year and with every seasonal change, I know many of us are hoping and hoping for things to get better and I know it will. It has not been an easy year for all of us and we are all adjusting every single day. However, know that you’ve been through harder times and can overcome whatever challenges that are facing you right now.
Take it slow. Do it with intention. Never forget what goals you have set for the beginning of this year. Even though it has not gone as we had planned, that does not mean you have to put all of your goals and dreams on hold. Whatever they may be, have the courage to continue through. Continue through these troubling times. Continue through with your goals. Take it step by step and know that even though the results are important, it is the process that matters the most, what we would look back to years from now.

Of course you can’t miss having all the pumpkin recipes. I’ll be celebrating fall with this Vegan Pumpkin-Spiced Cake. It is made with minimal ingredients and paired with a Brown Butter Cream. Not overly sweet and perfect with a cup of tea. I made it using a 8×8 inch pan, but you can certainly use a round pan if you prefer. Adjust the baking time accordingly.
