These Vegan Lychee Panna Cotta require minimal ingredients to make and are light and refreshing snack or dessert to have. No baking required and would be loved by all.
I’m almost always the only one out of my family who loves to eat fruits.
My siblings would have an orange or some berries every once in a while when they “feel like it” which basically means they’re not going to. However, whenever my mom brings home lychee, they would devour them. She doesn’t buy them often because they are considered “hot” foods, not from their temperature but from the effects the fruit has on our body. If eaten too much, you might get a sore throat.
When she does buy them, my mom would buy a couple of bags of them once for the season, clearing our fridge for space for them. My mom would lay newspaper on the kitchen floor and when my siblings and I were young, we would sit in a circle peeling the skin of the lychee and eating them together. A fan from our kitchen counter would be on, the edges of the newspapers we are sitting on flying away slightly.
They are simple moments and we don’t always talk a lot, but they are times we appreciate being surrounded by one another before we run off to do other things.
