This Vegan Lilac Sponge Cake is perfect for the Spring and is made with minimal ingredients. It has the right amount of sweetness and great with a cup of tea as an afternoon snack or for dessert!
I have been seeing lilacs everywhere on social media and have been on the hunt for some since they are only in season for this month only. I have not seen any at the grocery stores and farmers markets that I’ve been too. However, this weekend, I woke up extra early and made sure I was at a local farmer’s market right before it opened. After browsing through the market, I finally found some stalls that were selling Lilacs! I honestly jumped up with joy upon seeing them and almost skipped to the stalls to get in line for some.
I knew I wanted to make a cake with these lilacs and when I returned home with a bunch of lilacs, I took the time to clean them and dry them out so I could use it with the cake. I love how vibrant the color of the lilacs are and especially how good they smell! If I could, I would fill my room with all the lilacs I can find.
For this Lilac Sponge Cake, I made a simple buttercream frosting with it, but you can also leave it unfrosted and it tastes good as is. If you are ready to make this Vegan Lilac Sponge Cake, here are the ingredients you will need:
-gluten-free flour or all-purpose flour
-organic coconut sugar
-apple cider vinegar
