This Vegan Grapefruit Yogurt Cake is light and refreshing to have. It is not overly sweet and is gluten-free friendly and made oil-free.

Vegan Grapefruit Yogurt Cake

I watch as my dad brings in all the bags of groceries they got at the supermarkets in Chinatown. They always go early in the morning to avoid the crowd but also be on a lookout for produce in the reduce sale section. Oftentimes, the produce are only bruised slightly but not fit enough to be on display and brought to the reduced sale section.

After they put the bags down, I would immediately start unpacking everything, looking forward to what my parents found in the sale section. Once, my mom got a couple bags of what I thought were oranges. After cleaning and drying them, I would put them all in the fridge to have them as snacks later on.

I would grab 2, peeling them carefully around the orange, not wanting to break the peel midway. Anyone else like to do this as well (kind of like peeling apples around and not breaking the peel until the end)?

After dividing them and putting them into my snack bowl, I would bring it out to my desk prepared to eat them while doing homework. I bit into one expecting the sweetness and tanginess of the oranges and excited seeing how vibrant the color was, but little did I know it would taste bitter instead. I didn’t want to throw them out, so ate a few more pieces before I could not stand them anymore and brought them out to my mom telling her the “oranges” are bad.

My mom laughed and told me they are not oranges but grapefruits. She tried one and personally thought they were sweet but not me. I stopped eating them and it took me a few more tries over the years to enjoy them, mostly if they are made as desserts or roasted.

This leads me to this Vegan Grapefruit Yogurt Cake with a Grapefruit Glaze. I got a large bag in the reduced sale section recently and couldn’t help but remember the memories of my childhood incident being brought up again. The cake smells amazing with the aroma of the grapefruit and has no bitterness to it. A win win for me. The cake is fluffy with the right amount of sweetness and is also made oil-free.
