Ingredients

Gingerbread Crust

208g 1:1 gluten-free flour

50g powdered sugar

6g ground cinnamon

1 tsp ground ginger

½ tsp ground nutmeg

¼ tsp ground allspice

Pinch of fine sea salt

75g unsalted vegan butter, cold

10-15ml unsweetened plant-based milk of choice, cold

Filling

400g full-fat coconut milk

120g molasses

1 tsp ground cinnamon

½ tsp ground ginger

¼ tsp gound nutmeg

⅛ tsp ground allspice

180g chopped vegan dark chocolate or chocolate chips

 

Instructions

  1. Make the filling. Add the coconut milk, molasses, cinnamon, ginger, nutmeg, and allspice into a saucepan and bring to a simmer over medium, stirring frequently. Place the chocolate into a glass bowl. Pour the coconut mixture over the chocolate and stir until the chocolate has melted and the filling is well combined. Divide the filling among the tart pans. Transfer the tarts into the fridge to chill for 2-3 hours or until the filling has set. Garnish as desired and enjoy!
