These Vegan Earl Grey Lemon Tarts are the perfect summer desserts to have. They are refreshing to have with a bit of tanginess from the lemons.

I walked out from our AC’ed room and out into a humid hallway, making my way to the kitchen.
From the top of the stairs, I could hear the water boiling from the kettle quickly for a few seconds before my mom turned off the stove. Even though it was the summertime and it was hot and humid inside the house, my mom always made a fresh pot of tea, paying respect to our ancestors where she would pour the freshly brewed tea to small tea cups at the shrines in our house.
It was a part of her morning routine and a time where she made her prayers. No matter how tired she might be, she hardly ever skipped this part of her morning rituals. We didn’t live close to any temples and hardly ever went unless it was Chinese New Year or another major holiday and one of my uncles would drive us over. The room where all the shrines in our house were became a sacred area where my mom would make her prayers.
No one would bother her in the morning whenever we see her there, knowing how sacred and important the time was for her. Despite the fears of moving across the world from her home country, she knew that our ancestors would always be looking out after us through the good and also challenges that come our way.
Are you more of a coffee or tea person?
