These Cookies and Cream Mousse Tarts are unbelievably rich and creamy. They are made with simple ingredients and are a delight to have. They are vegan and gluten-free with a delicious chocolate cookie base.

I would scan the cookie aisle looking for the cookies my teacher brought for us.
The first time I had Oreos was when I was in 2nd grade. My teacher would often surprise us with snacks she either made from home or brought for us in the morning before class began. I don’t know who was more excited, her in sharing the snacks with us or us in anticipation of being able to eat them. She was my favorite elementary teacher, not just because she always gets things for us, but she made everyone feel at home in her classroom.
Once she bought a couple of packages of Oreos for us. I’ve never had them before as my parents at that time didn’t buy many American snacks for us. I became obsessed with them since that time, enjoying the combination of chocolate and the sweet cream filling (maybe more so with the filling).
After that time, every time I went grocery shopping with my mom in American grocery stores, I would scan the aisles looking for the cookies my teacher had brought for us. I didn’t remember what they were called and only remembered what they looked like. I was so excited when I spotted the Oreos package the first time, but also a little disappointed.

My dad was the only one working at that time and I know how hard he had to work to provide for my family. So I would only get a package of Oreos on special occasions and at other times, I would go for the store brand cookies and cream version since they were often cheaper or wait for my teacher to get Oreos for us again.
I am not as crazy with Oreos now compared to back then, but they hold a special place in my heart hence the making of these Vegan Cookies and Cream Mousse Tarts. They’re creamy and made gluten-free friendly with a chocolate cookie base.

What to prepare first
These tarts can be prepped the night before. The cookies and cream dome takes about 2-3 hours to set so if you have time, you can prep the filling the night before. The filling is made with only 3-ingredients.
Are these tarts gluten-free?
If you’re making these tarts gluten-free, use gluten-free Oreos or any other vegan cookies and cream cookies that are gluten-free. The chocolate cookie base can be made gluten-free using gluten-free flour. I recommend Bob’s Red Mill 1:1 Gluten-Free Baking Flour. Note that Bob’s Red Mill also has a regular gluten-free flour blend. Make sure you use the 1:1 Gluten-Free Baking Flour.
How to store these tarts
Place any leftover tarts in the freezer in an airtight container for up to 7 days. When you are ready to eat them, set them on the counter for about 10 minutes to soften.
