This Vegan Cinnamon-Spiced Apple Bread is one of those recipes you’ll want to bake all season long! Cozy up with a slice of this sweet and comforting bread with a latte or your favorite fall drink and your favorite book or movie. After one bite, you will for sure want another slice right away!

I watched, still in my PJs, as my dad brought in all the bags of groceries they got after their trip to Chinatown.

I usually go with them but sometimes, if my dad has an early doctor’s appointment that same morning, they will go without me and let me sleep in. We always go in the morning to not only avoid the crowds but also be on the lookout for produce in the reduced sale section. They usually have more in the middle of the week rather than weekends which worked out since my dad usually has his day off from work on Tuesdays.

After they put the bags down, I would immediately start unpacking everything, one because of my curiosity to see what they got and two, wanting first dibs of whatever they got too. Oftentimes, they were grapes, oranges, or apples and anything else that was in season during that time of the year. We would almost always get any of the fruits unless they were pears which we would not get since we had 3 large pear trees in our house and do not have the appetite to have more pears.

Sometimes, they would get so many apples that our fridge would be full of them and my mom would start complaining that no one is eating the apples and they would go spoil soon. So, knowing my love for baking, I would look up all possible apple recipes I could make with them. I would wake up early the next morning, standing at a corner of our kitchen table, peeling apples away and chopping them to make apple pie, apple bread or sometimes my mom would dehydrate them to make soup with or snack on.

By mid-morning, around the time when everyone starts to come downstairs, the kitchen would be warm from the oven and smell of cinnamon and buttery crusts, a smell I would never get tired of.

Even though I was in the kitchen all morning, I could stay there forever and bake, loving not just the process of baking but also the joy in knowing my family or friends would be able to enjoy something they usually don’t make or eat since my mom only cooked or baked Chinese and Vietnamese recipes.

On a recent Whole Foods order, I got some extra apples that I didn’t order and was wondering what I would make with them since I could not eat them raw (I am allergic to raw apples). I usually avoid apples all together since there are times when even cooked apples make me start to react to it, but I was craving them so badly I decided to make some apple bread with

Flour: You can make this apple bread gluten-free with Bob Red Mill’s 1:1 gluten-free flour, substituting it with the same weight.

Sugar: To make it refined sugar-free you can use coconut sugar. I would not recommend using maple syrup as this would change the over amount of weight ingredients to dry ingredients. If you do not have brown sugar, you can also use cane sugar.

Milk: I used unsweetened almond milk, but you can use any other plant-based milk of choice!

Apples: Feel free to use any apples you want or if you want to make it with pears, you can also substitute the apples with them and add in some nuts of choice you want for an additional texture to the apple bread.

Coconut Oil: If you do not have coconut oil, you can also substitute it for the same amount of butter.

What should I do if the batter is too wet or not baked through?
This might happen if you did not weigh the ingredients correctly. This happens to me sometimes too when I get lazy and do not use a scale. If this happens to you, add 1 tablespoon of flour at a time until the batter is a little thicker.

If you measure the ingredients and find that the batter is taking longer to bake than the indicated timeframe, it might just be an oven temperature difference. Bake the bread for an additional 5 minutes or until the bread is baked, covering the top as needed with aluminum foil to preen the top from over-browning.

Can I make this apple bread gluten-free?
Yes! Substitute the regular flour with an equal amount of gluten-free flour.

How do I store the apple bread? Can I freeze it?
Store the apple bread in an airtight container to prevent the bread from drying out. To freeze it, slice the apple bread and wrap each slice individually before transferring it to the freezer. To make it soft and moist again after being in the freezer, place the sliced apple bread on a baking sheet and heat it at 350F for 5-8 minutes, depending on how frozen the bread is, until the bread is warm and soft again on both sides. You can also microwave each slice for 30 seconds to 1 minute, depending on how thick or thin each slice is.

250g (1 cup) unsweetened, plant-based milk of choice

15mg (1 tbsp) apple cider vinegar

250g (2 cups) all-purpose flour

190g (1 cup) brown sugar

3g (1 tsp) ground cinnamon

½ tsp ground nutmeg

6g (2 tsp) baking powder

½ tsp baking soda

 ¼ tsp fine sea salt

86g (6 tbsp) unsalted, vegan butter, room temperature

30g (2 tbsp) unrefined, coconut oil, melted

64g (1/4 cup) unsweetened applesauce, room temperature

5g (1 tsp) pure vanilla extract

2-3 large apples, diced


Cinnamon-Sugar Topping

50g (¼ cup) cane sugar + 6g (2 tsp) ground cinnamon, combined

¼ cup pecans, chopped

2 tbsp maple syrup


  1. Preheat the oven 350F. Line a baking bread pan with parchment paper or lightly brush with some melted, coconut oil or vegan butter.
