Confession. I was never crazy about oreo cookies. Growing up, my dad is the sole financial supporter in my family, while my mom stayed at home to take care of my siblings and I. I come from a family of restaurant owners where both my grandparents had restaurants back when they were still living in Vietnam. However, with wars during that time and the need to immigrate to the U.S., my great-grandparents closed down the restaurant. My dad took his love for cooking back to the U.S. when he arrived and has since then continued to work in various Asian restaurants with the dream of having his own someday.


Having only one source of income, money was tight in my home. So whenever my mom and I go grocery shopping together, I understand we should spend the money on essentials. Every once in a while, I can get snacks, but I understand that I shouldnt spend so much money on them and would always go to the dollar aisle for cookies. Of course I wanted those $3 or $4 dollar packages of oreo cookies when I was a kid knowing a lot of my friends also like them, but I resisted and went for the $1 package of cookies instead plus I think they were a little too sweet for me.

Cookies since then always have a special place in my heart. I always love making them at home, liking the feeling of knowing there is a jar or box of cookies whenever I want some. Thinking about oreos, I decided to make a twist of them and made these Chocolate Os Cookies instead. They are chocolate cookies filled with a chocolate frosting, vegan and gluten-free.
