This Chocolate Chip Vanilla Cake requires minimal ingredients to make and is made oil-free. It is paired with a blackberry icing that enhances the flavors of the cake even more.


I have to admit, cake was not my favorite dessert to have. It was often too sweet for me and I much rather have all the cookies, brownies and ice-cream I can have. It might also be because my mom usually by Chinese cakes which are often made with fruits or custard. The little kid in me just wants all the chocolate.

Nonetheless, I got into making cakes this year after experimenting with them more. I love making layer cakes or just making one layer and see how I can decorate them. I was looking through all my past recipes this month and last month that chocolate hasn’t appeared on my page for a while. I knew immediately that I had to change it.


Wanting to make a cake, I decided to add some chocolate chips to it and with fresh blackberries from the farmers market, I smashed a few to bring out the color of the icing. The cake itself is not overly sweet. The icing can be optional if you do not want it.
