These Vegan Carrot Cake and Coconut Balls require 10-ingredients to make only and are gluten-free, refined sugar-free and oil-free. They can be made in less than 30 minutes and serve as a perfect snack to have.

We all have those mid-afternoon humps between 2-4pm when we want to go home or grab something to eat. Now that it is March and with Spring around the corner, I am ready for all the spring and Easter treats. Short on time, I made these simple and easy Vegan Carrot Cake and Coconut Balls. Feel free to add anything else to them like mini chocolate chips or extra chopped nuts.
