These Vegan Bánh Xèo (Vietnamese Crepes) are easy to make and require minimal ingredients for the batter. It is thin and crispy, yet flavorful. Have it for a hearty lunch or easy dinner.

Vegan Bánh Xèo (Vietnamese Crepes)

I didn’t grow up in a large house. Right, when you walk into my house, the kitchen would be to the right and a few steps forward was the living room; so whenever we were cooking something, it didn’t take long for the aroma to fill the house.

We have 1 large table at the center of the living room where we gathered together for dinner. Even though it is an easy recipe, my mom didn’t make Bánh Xèo (Vietnamese Crepes) often. It is my absolute favorite recipe of hers and only requests to have them on my birthday and maybe this is the reason why we only have it once a year.

After I showered, my mom would start making them for me with the old skillet she has been using since we moved into that house. She would heat up the pan and start stirring the batter that was prepared the night before. Once the pan is ready, she would work at a rapid speed, pouring a large scoop of the batter into the pan and twirling it until the batter covers the pan. Then, she would wake for it to get crispy over low heat.

I would wander back and forth between the kitchen and the living room, waiting for it to be ready and super excited to have one. Once it is ready, my mom would bring a plate out for me while she makes the other ones. By the time everyone in the house finished eating, she would have just started making hers. She was never bothered by it though even though she sometimes eats alone while everyone else heads upstairs. If school was not the next day, I would wait downstairs in the living room until she finishes not wanting her to be alone. Even though it is not something major, she taught me what patience and sacrifice mean, reminding me that true love is selfless.
