These Vegan Almond Madeleine Cookies are soft and rich in flavor. They are the perfect snack size and requires less than 10 ingredients to make. Have it with a cup of tea or eat as is.

The first time I had madeleine cookies was when I went to study abroad in Paris, France. I remember seeing them for the first time and having no idea what they were. I tried them at the first bakery I went and fell in love with them instantly. They taste like cake but in cookie form.

When I returned home, I had always thought about making some madeleine cookies that are vegan and gluten-free friendly. So here they are now after three years since I’ve been to Paris, but it is never too late for some cookies 😉

Here is what you will need for these Vegan Almond Madeleine Cookies:
-Superfine Almond Flour
-Gluten-Free Flour
-Cornstarch
-Organic Coconut Sugar
-Coconut Oil
-Unsweetened Almond Milk (or any other nondairy milk)
-Baking Powder and Baking Soda
-Salt
