Ingredients
57g unsalted, vegan butter, room temperature
100g cane sugar plus more for rolling
43g unsweetened apple sauce
115g 1:1 gluten-free flour (I used Bob Red Mills)*
½ tbsp glutinous rice flour**
½ tsp baking powder
½ tsp baking soda
15g ceremonial grade matcha powder (I used this one)
Pinch of fine sea salt
Instructions
- In a large bowl, add in the vegan butter and sugar. Use a hand mixer to cream for 3-5 minutes. Add in the applesauce and use the hand mixer to beat the ingredients together until completely combined. Set aside.

In a separate bowl, add in the flours, baking powder, baking soda and salt. Sift in the matcha powder (don’t skip this step!). Mix until well combined.

Fold the dry ingredients into the wet ingredients. Be sure not to overmix. Chill the dough for 30 minutes.

Preheat the oven to 350F and line a baking sheet pan with parchment paper or baking mat.

Using a 1-inch or 1 ½ inch cookie scoop, scoop the dough onto the sheet pan, placing them 2 inches apart. Roll each dough into a ball and roll them into some cane sugar until completely covered.

Bake the cookies for 10-12 minutes or until the edges are lightly golden. Allow the cookies to cool completely to allow them to set before serving.
Notes
*You can also substitute with equal amounts of all-purpose flour.
**The glutinous rice flour allows for the chewy and pillowy texture. If you do not have it, you can substitute it with equal amounts of tapioca flour, arrowroot flour or cornstarch.
