These Single Serving Strawberry Shortcake (Vegan, Gluten-Free) requires less than 5 steps and less than 10 ingredients to make. It is soft and fluffy in the inside and is the perfect breakfast meal for the summer.

My obsession with Strawberry Shortcakes began right after I was introduced to the Strawberry Shortcake movies as a little kid. I wanted a Strawberry shaped house just like the one Strawberry Shortcake lived in in the movies.

Well, that didn’t happen but what I discovered was my new found love for Strawberry Shortcakes, the fluffy biscuits, the layer of cream or yogurt and especially the layer of fresh strawberries. I could not stop myself from eating them and over time, it became a weekly weekend breakfast item. However, over time, my siblings and I began to grow out of it and our weekly ritual changed.

It was not until recently that I realized how long it has been since I had a Strawberry Shortcake. So here I am with a Vegan and Gluten-free recipe for these Strawberry Shortcakes. The recipe is enough to serve 2 people or you can make 1 large Strawberry Shortcake like I did here.

-Nut milk of your choice
