With the warm weather ahead in Austin and with the stay at home orders, I have been craving freshly made ice cream. Going to get ice cream after dinner is one of my favorite actvities to do every time I go out to eat with friends, I love having a full and happy dinner with friends who I care about and ending the night with something sweet we all enjoy. I am one of the ones who would ask for samples for as many ice cream flavors as I can before making a decision. Everytime I am at an ice cream shop I always get at least 2 flavors, one being a new flavor I have not had before and another involving chocolate of some sort (because chocolate ice cream is a must right?).
Given that none of the ice cream shops are open near me and I cannot get to one, one night I decided to make some homemade ice cream. I wanted a new flavor to try and saw that I had some beet juice that I have not used yet. Now, I do not have an ice cream machine and was not sure if it would work out but after testing it a couple times, I made it work. This Vegan Coconut Beet Ice Cream requires 3 key ingredients only and you would not need to worry about getting an ice cream machine. It is a cross between regular ice cream and sorbet.
