They were so sour.

I walked into the kitchen finding some tiny limes on the kitchen counter. I asked my mom why they were there, wondering why she picked them off from our lime tree. Often times it’s because they fell off when she was moving the pot around. They’re still too sour to eat.

The lime tree was not really big but we had it for a couple of years and every year we had a few limes. They never get too big but my mom would wait until she doesn’t see them growing anymore or when they start to turn yellow before picking them.

Even though they never got too big, I loved seeing the excitement in my mom’s eyes she saw the flowers blooming and clusters of limes start to appear. The corner of her eyes would crinkle and she would not stop smiling.

It was her hobby besides taking care of my siblings and I and also cooking all the time. When she was upset or something troubled her, she would often be outside taking care of her plants, trimming and repotting any that needed to be. It was her time to herself and something she found comfort in besides being in the kitchen and everyone knows not to bother her.

There are some things you enjoy doing that others don’t and that’s one of the things that makes life and every one of us so special. We don’t all need to like the same things, do the same things, look the same way…Whatever it is that you enjoy doing do it with your heart fully. These joys are brought to you for a reason.

With these thoughts in mind let’s get to our love for baking. I made these vegan key lime tarts on a day when it was nearly 100F outside and I wanted something not overly sweet and does not require me to turn on the oven. I had a few limes in my fridge and thought it would be fun to make some small tarts that require no baking at all leading to these No-Bake Vegan Key Lime Tarts being birthed a few hours later. Let’s get to them!

Here is an overview of these No-Bake Vegan Key Lime Tarts.

Granola: Use any granola brand you like or make your own. I also have a breakfast granola recipe you can try. Make sure the granola you use is vegan and gluten-free friendly if you are sensitive to gluten.

Shredded Unsweetened Coconut: The coconut flakes provide a coconutty taste to the crust and additional texture to it. If you don’t have it, you can leave it out.

Cornstarch: The cornstarch helps bind the filling together. If you don’t have cornstarch you can also substitute it with equal amounts of arrowroot powder or tapioca flour. The cornstarch also helps give the filling a custardy texture.

Coconut Milk: Make sure you use full-fat coconut milk. This provides the rich and creamy taste of the filling.

Matcha: I used a little ceremonial matcha to add a vibrant green color to the tarts. If you do not have matcha powder, you can leave it out or you can substitute it with a tiny drop of natural vegan food coloring.

Limes: I found that using fresh lime juice provides the tarts with a more refreshing taste.

Optional Toppings: Feel free to top the tarts with additional sliced limes, shredded coconut or edible flowers.

Are the tarts gluten-free?
Yes! It is entirely gluten-free. Just make sure you purchase granola or the granola you make are certified gluten-free if you are sensitive to gluten to ensure there is no cross-contamination.

How do I store the tarts?
Store the tarts for up to one week in the fridge in an airtight container.

How do I know when the tarts are ready to be served?
The filling should be set. You can touch the filling very gently and if it doesn’t sink down, the tarts are ready.

My crust is not coming together. What can I do?
If you find that your crust is a bit wet, add about 1 tablespoon of shredded coconut into your food processor at a time and blend until you can feel that the crust can come together.

180g (2 cups) vegan granola of choice (make sure they are gluten-free if needed)

27g (⅓ cup) unsweetened, shredded coconut

½ tsp ground cinnamon

⅛ tsp fine sea salt

90g (¼ cup) maple syrup

½ tsp pure vanilla extract



200g (1 ⅓ cup) full-fat coconut milk

36g (¼ cup) fresh lime juice

15g (1 tbsp) unrefined, coconut oil, melted

50g (¼ cup) raw cane sugar

Zest of 1 lime (~1 tsp)

½ tsp ceremonial grade matcha powder + 15ml (1 tbsp) hot water

15g (1 ½ tbsp) cornstarch + 15ml (1 tbsp) cold water, mixed


Toppings (optional)

Fresh limes, thinly sliced

Edible flowers


  1. Prepare the crust. Add all the ingredients for the crust together into a bowl and mix until well-combined. Transfer the mixed ingredients into a food processor and pulse the ingredients until they come together.
