This Vegan Coconut Peach Tart requires no baking and is made gluten-free and oil-free. It is light and refreshing to have for the summer.
Growing up, I had a large peach tree at my parent’s home. They would blossom during spring and by summer time, they would be ripe enough to be eaten. However, we always had to harvest them a little earlier because the squirrels in our garden always snag them before we could. They would only take a bite or two before tossing them. My mom and dad would get so frustrated because they hate wasting all the fruits.
We have one ladder at home and every year, I would climb to the highest step, with my mom holding onto the ladder, and climb up the tree to pick the peaches at the top. Those were the super good ones because they are extra large and sweeter being in the sun more. Whenever summer comes now, I always think back to peaches and those days where our refrigerator would be filled with peaches.
I have no idea how the summer is going by so quickly already and I am for sure not ready for it to end. I have been buying peaches non-stop at the farmer’s market and realized I haven’t made many peach desserts. I decided on this easy No-Bake Vegan Coconut Peach Tart, not wanting to turn on the oven. Can you relate?
I made this Coconut Peach Tart with Native Forest’s Unsweetened Organic Classic Coconut Milk, Native Forest’s Organic Peaches, and Let’s Do Organic’s Arrowroot Powder from Edward & Sons. I used the full-fat version of the coconut milk for a richer flavor and creamier texture. As you know, I love using Edward & Sons’ products for baking because of their high quality.

-organic cane sugar
