
This Vegan Coconut Grapefruit Tart is the perfect dessert to have all year round. It is not only vegan, but also gluten-free, refined sugar-free, oil-free and even better, requires no baking.

It is one of those times of the year when we are all ready for Spring to come, although, this winter has not been too bad for me as I moved to Austin and the weather is much warmer. I am beyond ready for spring to come as we head into March. I want to see more colors and have a larger variety of spring produce, especially strawberries.

To kick off March, I made this Coconut Grapefruit Tart that requires no baking at all. I used to not like grapefruits at all, not liking the slight bitterness of them. However, paired with the coconut, I came to love grapefruits even more.
