How to make a Rainbow Vegan and Gluten-free Platter?

This colorful and vibrant Vegan Rainbow Platter is the perfect treat to have with groups of friends or family members, and can be enjoyed at any time of the day.

Fruits and vegetables are the first things on my grocery list every week. With the farmer’s markets being in full force everywhere, I try to purchase fresh local ingredients as often as I can.

As a snacker, I always make sure to have someone on hand easily accessible. Other than relying on granola bars, I enjoy fresh fruits and veggies more. I love seeing all the different colors come together especially the rainbow. This inspired me to make this Vegan Rainbow Platter which contains fruits and veggies I love and some vegan and gluten-free pretzels, and coconut yogurt.

To make this Vegan Rainbow Platter-
1. Identify the colors of the rainbow- red, orange, yellow, green, blue, indigo, and violet.
2. Find fruits and vegetables you like that are similar in color to the 7 colors of the rainbow, such as strawberries, carrots, yellow bell peppers, yellow 3.squash, corn, zucchini, green grapes, green/purple grapes, blueberries, cabbage, spinach, and many more!
4. Identify a few crunchy snacks you like to add in the platter. For me, I added some pretzels and mixed nuts to my platter.
5. Assemble them in a wooden/cheese board. Enjoy with all your friends and family members!
