This Healthy Vegan Vanilla Granola Yogurt Bowl makes a quick and easy breakfast bowl. It requires 5 minutes to make and you will have a filling sweet breakfast in no-time.
I didn’t grow up with a lot. My parents immigrated to the U.S. from Vietnam and my dad was the main financial supporter. My mom chose to stay at home to take care of my siblings and I. I would go with my mom and dad to shop during sales or the reduced produce sections in grocery stores. We couldn’t afford taking flights to other cities for vacation.
But….we were not unhappy.
We made the best out of what we have and my siblings and I learned to have fun with the little toys we have. Even though we don’t have much, my mom made sure we have filling meals at our table every day. It is from her that my love for food stems from.
I remember the weekends when we would wait until the end of the day to go the larger farmers market where we lived to shop for the reduced produce as everyone was rushing to get home and was selling their produce at a lower price. There were times when we would buy cases and cases of strawberries as my mom knew they are my favorites. We would stock up on them and freeze whatever we won’t be able to finish so we can have them throughout the year. As you might guess, strawberries and farmer’s markets hold a special place in my heart.
For us, it was never truly about money. It was (and continues to be for me) about having the freedom to do what we want and love the most, and also being able to appreciate the value of simpleness.
While I may not be the closest with my family now, the memories we had together and values they taught me hold close to my heart. It brought me back to my why, allowing me to reflect on why I am doing the things I am doing now.
To commemorate this special memory, I made this Easy Vegan Vanilla Granola Yogurt Bowl (gluten-free, refined sugar-free). Here are the ingredients you will need to make this granola yogurt bowl:
-plant-based vegan yogurt of choice (I used plain oatmilk yogurt)
-granola of choice (I used my homemade granola recipe and will provide it below)
-gluten-free rolled oatmeal (make sure not to use instant oatmeal)
-raw, unsalted almonds, chopped
-strawberries (or any other fruits you prefer)
