My mind drew a blank when they asked me if I had them before.
I didn’t have granola until I think it was my sophomore year in college. Growing up, I didn’t have any other American-style breakfast besides pancakes, waffles and cereal. My mom always made us something new for breakfast or allowed us to have what seemed more like lunch/dinner meals for breakfast instead when she did not want to cook or even more so, leftovers from dinner.
So you should see how surprised I was when I first had granola. I was introduced to them by my college roommates. My mind drew a blank when they asked me if I had them before. I know many say college is a time where you discover more about yourself and I totally agree with it too, but for me, it was a time where I could finally try foods from different cultures and food that are common like granola (and yes, oatmeal for me too) that I never had because my family mainly had Chinese/Vietnamese food.
I don’t always have granola for breakfast, it’s more of a snack for me, but whenever I do, I always ask myself why something that is so simple to make can smell and taste so good at the same time. I really need a candle scent of it.
Anyhow, lets get to making this Healthy Vegan Breakfast Granola! Its gluten-free, refined sugar-free and oil-free! Even better, you can make it all in one bowl and with less than 10-ingredients! Of course, you can play around with the mix-ins and spices to make it your own granola.
Here is an overview of this Healthy Vegan Breakfast Granola.
Ingredients
Rolled Oats: Oats are naturally gluten-free. However, depending on where the oats are packaged, there can be cross-contamination. If you are sensitive to gluten, make sure the oats you get are labeled gluten-free.
Nuts and Seeds: I used raw almonds, pumpkin seeds and some hemp seeds. However, you can substitute it for any other nuts and seeds you like such as walnuts, cashews, pistachios and sunflower seeds.
Maple Syrup: The granola is naturally sweetened with maple syrup. It is lightly sweetened so if you want more sweetness add more maple syrup.
Spice(s): I added ground cinnamon for some warming spice and flavor to the granola. You can also add some ground ginger, nutmeg or cardamom for a more warming flavor.
Unsweetened Coconut Flakes: The coconut flakes provide a coconuty taste to the granola and additional texture to it. If you dont have it, just leave it out and add in any other ingredients you want.
Optional Mix-Ins: Feel free to add in additional dried fruits, chocolate chips or some lemon/orange zest for more flavors.
Tips
Is the granola gluten-free?
Yes! It is entirely gluten-free. Just make sure you purchase oats that are certified gluten-free if you are sensitive to gluten to ensure there is no cross-contamination.
How do I store the granola?
Allow the granola to cool completely. Then, transfer the granola to an airtight container. You can keep them in your pantry and have them whenever you want.
Can I add in additional mix-ins?
Yes! You can add additional nuts, chocolate chips or dried fruits to your liking.
How do I know when the granola is done?
Make sure you lightly toss the granola halfway through baking it. You know it is ready when the granola is lightly golden and fragrant. Keep an eye out for it though to ensure that you do not burn it!

Ingredients
180g (1 ½ cups) gluten-free rolled oats
80g (½ cup) chopped, raw almonds
27g (⅓ cup) unsweetened coconut flakes
21g (3 tbsp) raw pumpkin seeds
7g (3 tbsp) hemp seeds
3g (1 tsp) ground cinnamon
Pinch of fine sea salt
42g (2 tbsp) maple syrup
Instructions
- Preheat the oven to 300F (150C). Line a baking sheet with parchment paper or a Silpat.

To a bowl, add in all the ingredients except for the maple syrup. Mix until the ingredients are well-combined.

Add in the maple syrup and mix until well-combined.

Pour the granola onto your baking sheet pan, spreading it throughout the pan. Bake the granola for 8 minutes. Then, lightly toss the granola and bake for an additional 5-7 minutes, until the granola is lightly golden in color.

Allow the granola to cool completely before transferring it to a jar or airtight container. Enjoy!
