
This Vegan Soba Noodle Bowl requires minimal ingredients to make, yet is filling and flavorful. It is made using pantry items only. It is both vegan and gluten-free.


Despite my love for sweets, I do love a filling and wholesome meal, especially during busy days. Growing up, I always love my mom’s home-cooked meals. Being Chinese and Vietnamese, I was lucky to be able to taste authentic Chinese and Vietnamese dishes. As I grew up and went to college, my connection with my culture started to fade away.


I had regular American meals, particularly dining hall meals. I didn’t cook many Asian meals while I was at school, wanting to fit in and also wanting to experiment with other cultural foods. I was also a bit picky when eating out and having Asian food, thinking no one can beat my mom’s cooking skills.

Now, as I am farther from home, I have a desire to reach back into my own culture and experiment more with Asian cooking. I may not be the best right now, but am starting with the basics and learning from there. The first that I am making is this Easy Vegan Soba Noodle Bowl. It is inspired by a bento box I had at a restaurant in Austin, TX. This whole bowl took less than 30 minutes to make and is made by a 6-ingredient Maple Sesame Sauce. This bowl is not only vegan but gluten-free as well.

Here are the ingredients I used. Feel free to choose any vegetables or add any other toppings you desire.
-gluten-free soba noodles
-soy sauce or coconut aminos
-sesame oil
-minced garlic
-fresh lemon
-maple syrup
-creamy, unsalted peanut butter
-roasted vegetables of choice
