Pancakes were always a weekend tradition in my house. Growing up, I used to have those animal-shaped pancake makers, the ones with giraffes, tigers and silly smiley faces. I would make so many batches of pancakes that they are all I would eat for the entire day.

Now, the tradition stays the same with pancakes for the weekends for me and the occasional weekday. These pancakes are super easy to make and are vegan, gluten-free, and refined sugar-free.
