This Vegan Congee is easy to make and requires less than 10-ingredients. It is comforting and is perfect for breakfast, lunch, and dinner.

Easy Vegan Congee (gluten-free)

Congee or jook is one of the main dishes my mom made for my sibling and I whenever she does not have a lot of ingredients in the fridge or she wants a simple meal. She also makes it whenever one of my siblings or I get sick. It is made with simple ingredients and not a lot of spices, leading it to be a healthy meal to have. You can add any toppings you like.

Traditional congee is made with rice, broth (usually chicken but mine is made with vegetable broth), and some sort of dried seafood like dried shrimps which my mom loves to add to. Being vegan, I used some ginger to give it more flavor.

Here are the ingredients you will need to make this Easy Vegan Congee:
-jasmine rice
-vegetable broth
-fresh ginger
-toppings of choice
