What’s better than a stack of warm pancakes in the morning? These Chai Quinoa Pancakes are light, warming and are vegan, gluten-free, and refined sugar-free.

When I was a kid, I would only have pancakes on the very rare occasion as my mom was not familiar with making American recipes. I would wait until she goes to the grocery and was willing to purchase a box of pancake mixes.

After that, I would take out either my smiley or animal printed pancake makers and make plates after plates of pancakes. More often than not, I would eat them right from the pancake maker while they are super hot and drizzle them with maple syrup.

Now, while I don’t have the stomach of a child to eat several plates of pancakes at a time, I surely enjoy a good stack of pancakes like these Chai Quinoa Pancakes any day of the week. They require minimal ingredients and are simple to make.

Here is all you will need to make these Chai Quinoa Pancakes:
-quinoa flour (make at home by grinding them at home with a coffee grinder)
-dairy-free milk
-baking powder
-nut butter
-maple syrup
-chai spice
-apple cider vinegar
