2020 has definitely been a strange and challenging year for many. Many of us thought at the beginning of the year that this will be the best new decade. It doesn’t seem so long ago when in January, we were celebrating a new year with all the goals we have and milestones we want to reach. Within a few months, we are all forced to stay home, some losing jobs, others having to navigate work at home and for families, homeschooling while also working from home. Couple with the ongoing news and other things happening around the world, it has been challenging for us all.
I have been working non-stop throughout the year and usually don’t mind. However, lately, I’ve been feeling drained, tired and unmotivated. I knew it was time for me to take a break from social media and have a true couple of days offline. That was what I decided to do last week and allowed myself to enjoy the weekend. I walked around the city, saw more nature and also the sunset. It’s amazing how being in nature for simply a few hours can reset my mind. I feel myself gaining my momentum back and feeling more inspired to move forward, continue with new projects I have in mind.

I know there are a lot of things that do not require you to spend money in order to take care of yourself, but the top thing that always brings me joy is chocolate, the darker the better. Since the time we had to stay at home, I’ve been experimenting with cakes more and more and realized I haven’t made a chocolate one yet. That realization led to this 7-ingredient Vegan Chocolate Cake and Cream Cheese Frosting. The recipes make two layers, so if you want a larger cake, double or triple the recipe. You can also make it as a one layer using a 6-inch or 8-inch cake pan.
